Chris planted about 8 pepper plants this spring and we are now enjoying the harvest.... and so are our neighbors.
Saturday morning I went out and picked about 1/2 the peppers.... the kitchen sink is full and we have a box beside the sink that is full as well.
The reason Chris wanted so many peppers is PEPPER JELLY.... you know that sweet and a little hot stuff you put on cream cheese and eat with crackers....
So saturday morning Chris and I made 5 batches of jelly.... it was super easy and didn't take very long... 3 hours for 5 batches... including a quick trip to Wal-mart for more pectin.

3 cups of peppers, rough chopped(mix of kinds- we used bell, poblano, and Anaheim)
1 jalapeno, rough chopped
1 1/2 cups vinegar
6 1/2 cups sugar
6 oz liquid pectin
put all peppers and 1/2 c. vinegar in food processor- blend well
put pepper mix, vinegar, sugar in large pot... bring to a boil... boil 3 minutes
add pectin... return to boil and boil 1 minute
take off heat and put in jars... whaaa laaa.
sooo yummy- this is a very mild version (good on cream cheese)
