dinner with the Elders

Tonight the Elders came to dinner along with a member of our ward who I VT and is mom's VTer. Mom and I made spaghetti and meatballs, salad and homemade bread. We had brownies for dessert with a dark chocolate buttercream- pretty good.
The Meatballs were soooo yummy I thought I would share...


Best Meatballs EVER
1 pound ground pork
2 pounds ground beef
1 cup grated Parmesan
2 eggs
1 Tbsp dried basil
1Tbsp Italian seasonings
2 tsp garlic powder
2 tsp sea salt
¼ tsp ground red pepper (or ½-1 tsp red pepper flakes)
1 cup Italian bread crumbs, divided

Preheat oven to 400
In large bowl mix ground meats, cheese, eggs, seasonings and ½ c. bread crumbs. With hands mix very well (can refrigerate at this point for up to 24 hours)
Place remaining bread crumbs into a shallow dish.
Make meatballs. I use a cookie scoop. They turn out perfect in size and are uniform.
Roll in bread crumbs and place on a cookie sheet.
Bake for 20 min or until golden and cooked through.
Serve (as an appetizer, main dish or in spaghetti sauce over noodles)

Makes about 40-45 meatballs (serving size is 4-5 meatballs per person).
This recipe can be cut in half.
CAUTION- about 100 cal per meatball- but very worth it
